On my D&G 2 by six the big therms say to immerse them 3 1/2 inches to get an accurate reading. If I am running mine a little over an inch they are not accurate and of very little use for getting a finished product. I am now using a manual therm and gloves to get an accurate reading.

I have a similar setup, but seems like there is a fine line between. The therms go in at a slant, so there could be close to 3" on sensor (ive never measured, just guessing), but also noticed when I run my pan too shallow, say 3/4 inch, the reading goes down, until it is running around 1" or so again. I run it shallow quite a bit, say first boil, etc., but can tell by looking if it would be close to syrup yet. One time I bought the wrong size therm. (too long a stem)and just added a ?1/2"x3" nipple to compensate length, or whatever it was.
